Our goal was to create an exceptionally smooth chocolate with warm nutty notes and the luxurious creaminess of dairy. We express the warmth of the beans’ natural nutty flavor by carefully roasting and conching them. The result? This divine 43% milk chocolate with a luscious nutty base and a predominance of classic ‘chocolatey’ notes.

Venezuela, the country with a landscape of a thousand faces, from majestic mountain ranges, to rain forests and stunning white sand beaches – and hot all year round: it is perfect for growing our Criollo and Trinitario cocoa beans. 

 

Together with Peru & Ecuador, Venezuela is the cradle of cocoa. The Criollo dates back to the origin of cocoa, already enjoyed by the Mayans. It is distinguished by its mildness and white creamy color and complex flavor.

Flavor profile

This divine milk chocolate entices and then delights, thanks to its luscious nutty base and classic “chocolatey” notes. Our Criollo cocoa beans result in a strong flavor of caramel, hazelnuts and cooked milk with a hint of roasted cocoa.

 

For an optimal taste experience, please follow the below instructions:

Tempering indications

  • Ambient: 16-20°C / 61-68°F
  • Melting: 45-48°C / 113-118.4°F
  • Cooling: 27°C / 80.6°F
  • Working: 28-29,5°C / 82.4-85.1°F

Advised storage conditions

Store in a dry place. R.H.: max 60%. Between 16 and 20°C.
