Plant Based Panning Physalis

Steps

1 Panned Physalis
Ingredients
  • Dry Physalis 1000 g
  • Belcolade Pure Prime Pressed Cocoa Butter Cacao-Trace 30 g
  • Bergamot Tea 5 g
Preparation
  • Melt the Belcolade Pure Prime Pressed Cocoa Butter Cacao-Trace and add the bergamot tea.
  • Leave to infuse for 6-12 hours.
  • Melt the Belcolade Selection M. Plant-Based Cacao-Trace to 45°C and add the sieved and infused Belcolade Pure Prime Pressed Cocoa Butter Cacao-Trace.
  • Use a Selmi Comfit machine to coat the physalis.
  • Follow the correct parameters for the cooling and speed (8-12°C Cooling, 50% speed) to obtain a smooth surface.
2 Coloring
Ingredients
  • Belcolade Pure Prime Pressed Cocoa Butter Cacao-Trace 100 g
  • Natural yellow color liposoluble 10 g
Preparation

Melt and mix the Belcolade Pure Prime Pressed Cocoa Butter Cacao-Trace with the color and add onto the panned products (30-33°C add, 45% speed, 8°C cooling).

3 Shiny finish
Ingredients
  • Gum arabic-based shining agent QS

Depending on the brand and type of shining agent, the process and dosage can change.
