Steps

1 Seed Mix Recipe
Ingredients
  • Sesame Seeds 100 g
  • Flax Seeds 100 g
  • Poppy Seeds 100 g
  • Amaranth Seeds 100 g
  • Millet Seeds 100 g
  • Teff Seeds 100 g
Preparation
  • Spread the seeds over a sheet of baking paper on a baking tray.
  • Toast the seeds in an oven at 150°C until fragrant.
  • Leave to cool down.

Preparation
  • Prepare acetate tubes of about 1.5 cm in diameter.
  • Melt and temper the Belcolade Selection Amber Cacao-Trace to 28°C. Pipe into the tubes, leave to sit for 1 min., then pour out the excess chocolate.
  • Leave at room temperature until set and then put in a fridge at 16°C with a relative humidity level below 60%.
  • Once crystalized, peel the acetate off. 
  • Lightly coat the outside of the chocolate tubes with more tempered Belcolade Selection Amber Cacao-Trace and then roll in the seeds. Leave to set.
