Exceptional rich floral aromas of Ecuador

Cocoa is the heart of Ecuador. Its prized ‘Nacional’ variety has grown there for over 5,000 years and was one of the first cacao trees to be cultivated. With a floral aroma and complex flavour profile it is no wonder that it was one European chocolatiers’ most coveted luxury items in the 18th and 19th centuries.

 

We mainly use Nacional cacao, renown for its delicate floral notes of Jasmine, or Arriba, Spanish for ‘at the top’. Nacional cocoa uplifts you to an upper taste level. We especially use beans from Los Ríos and Esmeraldas, known for its incredible floral notes. Esmeraldas cocoa is powerful, while Los Rios cocoa is somewhat less intense and has a subtle earthy essence.

Flavour profile

Exhilarate in the luscious floral bouquet of Belcolade Origins Ecuador 71%, a dark chocolate made from Nacional cocoa beans that bursts with character and flavour. Its delicate notes of jasmine are complemented by the appealing undercurrent of coffee and humus. It is a match made in heaven but cultivated in the fertile soils of the Esmeraldas and Los Rios regions.

  • Ambient: 16-20°C / 61-68°F
  • Melting: 50-55°C / 122-131°F
  • Cooling: 28°C / 82.4°F
  • Working: 29-30.5°C / 84.2-86.9°F

Advised storage conditions

Store in a dry place. R.H.: max 60%. Between 16 and 20°C.
