Composition:

This application is made using 3 recipes

  1. Sugar Free Chocolate Mousse
  2. Mint Tea Cubes
  3. Crusty Rice

1. Sugar Free Chocolate Mousse

Milk 100 g
Egg yolk 50 g
Belcolade Noir Selection Sugar Free 250 g
Gelatine 4 g
Puratos Festipak 150 g
Fresh Cream 35 % 150 g

Method

Boil the milk and pour on top of the egg yolks, add the Belcolade Noir Sugar Free and mix until smooth. Add the soaked and melted gelatine and finally incorporate the semi-whipped Puratos Festipak and fresh cream. Freeze the chocolate mousse in silicone ball forms of Ø 44 mm.

2. Mint Tea Cubes

Water 200 g
Mint tea 1 bag
Sugar replacer QS
Gelatine 2 g

Method

Boil the water and make an infusion with the tea. Add the sugar replacer and make it as sweet as you want. Finally add the soaked gelatine leave and pour the liquid in a silicone mould to let it set. Then cut it in cubes.

3. Crusty Rice

Puffed rice 100 g
Belcolade Noir Selection Sugar Free 100 g

Method

Temper the Belcolade Noir Selection Sugar Free and mix with the puffed rice. Spread it out and cut into round shapes.

Final assembly

Garnish a glass on the bottom with some red fruits and mint tea cubes. Put crusty rice on top and finally the sugar free chocolate mousse.
