Belcolade participates in the Salon du Chocolat 2007

The first edition of the Salon du Chocolat for Professionals was held in Paris between 20-22 October. It was a great setting for Belcolade to welcome current and prospective customers to their stylish animated booth.

Puratos France were able to share the very latest Belcolade innovations, such as Costa Rican origin chocolates made using cocoa sourced from a Rainforest Alliance Certified™farm, and Cryst-o-Fil® - a range of pre-crystallised real chocolate fillings. The booth came to life when Belcolade's Stéphane Leroux (MOF Pâtisserie 2004) started to demonstrate his skills at working with chocolate, as he created wonderful chocolate pieces which drew large crowds in front of the booth. 

A series of professional conferences were organised by the event planners, one of the papers being presented by Pierre Descamps, Belcolade R&D manager. He promoted the Cryst-o-fil® concept and its many advantages in front of a very attentive audience. Proof of the popularity of the pralines he presented for tasting was clear when all of them disappeared at the end of his talk as he handing them out for tasting.

But for many customers, the highlight of the Belcolade booth was the opportunity to experience the perfect marriage between some carefully selected fine wines and chocolate praline creations. The pralines (presented on sticks displayed on thick Belcolade glass plaquettes) were the innovative creations of Dominique Personne of  The Chocolate Line, Brugges. The project had entailed working with tops chefs of his region alongside wine experts to bring the best flavour combinations together to work in harmony. The Belcolade chocolates which featured in these amazing creations included the origins from the "Collection Range", such as Costa Rica and Venezuela. Visitors were amazed at the combinations of chocolate and asparagus, chocolate and cheese, and chocolate and garlic

This first edition of the Professional version of the Salon was a great success for Puratos France Belcolade….roll on 2009 for the second instalment!
